Tomato Cucumber Salad
What You'll Need:
- 2 large cucumbers, peeled if necessary, and sliced
- 2-3 large tomatoes, wedged (or the equivalent of cherry or grape tomatoes halved)
- 2-3 green onions, sliced, whites and greens together
- 1 tablespoon fresh herbs such as parsley, basil and or thyme, optional
- 2 tablespoons olive oil
- 2 tablespoons vinegar
- Salt & pepper to taste
Directions:
Combine all ingredients in a bowl and toss well. Refrigerate at least 20 minutes before serving.
