What You'll Need:

  • 2 large cucumbers, peeled if necessary, and sliced
  • 2-3 large tomatoes, wedged (or the equivalent of cherry or grape tomatoes halved)
  • 2-3 green onions, sliced, whites and greens together
  • 1 tablespoon fresh herbs such as parsley, basil and or thyme, optional
  • 2 tablespoons olive oil
  • 2 tablespoons vinegar
  • Salt & pepper to taste


Combine all ingredients in a bowl and toss well. Refrigerate at least 20 minutes before serving.
