Spring Strawberry Salad
What You'll Need:
- 2 tablespoons white wine vinegar
- 1/3 cup oil
- 1 tablespoon honey
- 1 teaspoon mustard
- Salt and pepper to taste
- 3 cups salad greens, packed
- 1 bunch Harukei turnips with tops, greens reserved, bulbs thinly sliced
- 1 bunch breakfast radishes, thinly sliced
- 1 pint strawberries, hulled and halved
- 1 garlic scape, sliced
- ½ cup microgreens or shoots
- ¼ cup packed mixed herbs (such as dill, cilantro, oregano, basil, and mint)
- ½ cup toasted hazelnuts, crushed
Directions:
Whisk together vinegar, honey, mustard and remaining oil in a bowl. Season with salt and pepper. Toss together greens, turnip bulbs and greens, radishes, strawberries, garlic scape, herbs, and hazelnuts in a bowl. Add dressing and toss to combine. Garnish with microgreens. Serve immediately.
