Spinach and Strawberry Salad with Sweet Onion Vinaigrette
What You'll Need:
- 1 small sweet onion, chopped (½ cup)
- ½ cup light olive oil
- 3 tablespoons white wine vinegar
- 1 tablespoon plus 2 teaspoons granulated sugar
- 1 tablespoon mayonnaise
- ½ teaspoon Dijon mustard
- ¼ teaspoon kosher salt 1
- 3 cups fresh spinach (stemmed and torn if mature)
- 1 pint fresh strawberries, stemmed and halved
- 4 ounces blue cheese, crumbled (about 1 cup)
- 1 cup chopped candied pecans
Directions:
Process onion, oil, vinegar, sugar, mayonnaise, mustard, and salt in a blender until creamy and smooth, about 50 seconds. Taste and reseason with salt if necessary. Arrange spinach, strawberries, blue cheese, and pecans in a large bowl or deep platter. Drizzle with dressing, toss, and garnish with more of the ingredients.
