Kohlrabi Slaw


What You'll Need:

  • 3-4 small kohlrabi, peeled and shredded or cut into matchsticks
  • 2 -3 large leaves or collards or chard, cut in small ribbons
  • 1 carrot, shredded
  • Cilantro lime vinaigrette (see below)
  • 1 teaspoon salt

Directions:

Put kohlrabi and carrot into medium bowl, salt and toss well. Add vinaigrette to slaw, toss, and add leaves, toss again. Taste, reseason if necessary, and serve.


Cilantro Lime Vinaigrette

  • Zest of 1 lime
  • 2 tablespoons fresh lime juice
  • 1 garlic clove, minced
  • 1 teaspoon honey
  • 1 teaspoon kosher salt
  • ½ teaspoon ground coriander
  • ¼ cup extra‐virgin olive oil
  • 2 tablespoons chopped fresh cilantro

Whisk all ingredients together. Taste and reseason if necessary.
