Kohlrabi Slaw
What You'll Need:
- 3-4 small kohlrabi, peeled and shredded or cut into matchsticks
- 2 -3 large leaves or collards or chard, cut in small ribbons
- 1 carrot, shredded
- Cilantro lime vinaigrette (see below)
- 1 teaspoon salt
Directions:
Put kohlrabi and carrot into medium bowl, salt and toss well. Add vinaigrette to slaw, toss, and add leaves, toss again. Taste, reseason if necessary, and serve.
Cilantro Lime Vinaigrette
- Zest of 1 lime
- 2 tablespoons fresh lime juice
- 1 garlic clove, minced
- 1 teaspoon honey
- 1 teaspoon kosher salt
- ½ teaspoon ground coriander
- ¼ cup extra‐virgin olive oil
- 2 tablespoons chopped fresh cilantro
Whisk all ingredients together. Taste and reseason if necessary.
