green beans


What You'll Need:

  • 2 tablespoons cooking oil
  • 1 small onion, diced
  • 2 pounds fresh green beans
  • 3 cloves garlic, minced (or more)
  • 1 pound small new potatoes, scrubbed well
  • 1 quart water or broth
  • Salt and pepper to taste

Directions:

Wash and trim beans then cut into 2-inch pieces; set aside.

Heat a large pot or Dutch oven over medium high heat and add just enough oil to coat the bottom of the pan. Add onion and sauté for 5 minutes. Add green beans and saute 2-3 minutes more. Add garlic and saute for 1 minute.

Carefully add water or broth, the oil will spatter at first. Add potatoes, salt, and pepper then bring to a boil. Once boiling, cover then reduce heat to medium-low then cook for 30-45 minutes, stirring occasionally. Taste and reseason if necessary.
