Ghanaian Red Red
What You'll Need:
- 1 cup black eyed beans Palm oil
- 4 medium-sized onions
- ¼ cup tomato paste
- ½ teaspoon cayenne pepper 1 cube of boullion or stock 2 cloves garlic
- 2 centimeters ginger root 5 plantains
Directions:
Bean Stew:
- Soak beans overnight and then boil until soft. Remember to check the beans regularly whilst they are cooking. Drain the cooked beans and set aside.
- Peel and chop the onions.
- Heat some of the oil in the pan on the stovetop and add the onions. Stir until soft.
- Add the tomato paste, chopped garlic, chopped ginger, cayenne pepper, and salt to the onions. Cook for 5-10 minutes, stirring whilst cooking.
- Add the beans and stir. Keep warm on a low heat, stirring occasionally.
Fried Plantains:
- Remove the plantain skins with a knife, wash and slice into 1 to 1.5 centimeter pieces. Put oil in a pan on the stovetop.
- Add the plantain when the oil is hot, turn the plantain over during cooking, remove and drain once both sides are lightly brown and soft.
- Put equal portions of bean stew and plantain on each plate. Enjoy!
