What You'll Need:

  • 10 small beets, greens and stems removed
  • Extra virgin olive oil
  • ¼ cup honey
  • ½ cup vinegar
  • 2 whole fresh red chilis, 2 tablespoons chile paste, or 1 teaspoon crushed chili powder
  • Optional – 2 cloves of garlic peeled, 2 tablespoons nuts/seeds, 2 ounces crumbly or soft cheese


Heat oven to 400° Fahrenheit. Lightly coat the beets with olive oil. Place on a sheet pan and roast for about 30 minutes depending on size. You want a knife to insert to the middle and come out easily. Allow to cool until easy to handle. Peel the skins off using your hands or a paring knife. You may want to use gloves since the beets may stain your hands.

In a wide saucepan combine the vinegar, honey, chili, garlic if using. Bring to a boil, then reduce to a high simmer to combine and reduce slightly. Carefully add your sliced beets to the mixture and stir. Let beets heat through and coat with sweet and sour mix. Taste and season with salt and pepper.

Once you take the beets off the heat you may garnish with the nuts/seeds or cheese.
